Why? When you feel like that certain something that feels substantial, although leave you over-full
When? For tempting starters when friends are coming over, or simply when you feel like something special

Ingredients – makes enough for 2 people
6 medium plump, white button mushrooms ideally organic – cleaned and stemmed

Marinade –
¼ cup Tamari sauce or Braggs
4 tbsp olive oil
Herb mix – ideally fresh if you can! – ½ cup fresh basil (or ½ tsp dried), 1 tsp each of fresh sage & oregano (1/4 tsp of each if dried)
Pinch of black pepper (ideally freshly ground)

Stuffing –
6 heaped teaspoons of your choice of fillings eg Fresco Pesto, Yumus, Tasty Mock ‘Tuna’ Pate etc (check the Food Stylin’ blog for these recipes) http://www.fijamiesonfolland.com/whats-in-the-trunk/food-stylin/
What to do
Place your mushrooms in a mixing bowl, and leave soaking in your marinade for ideally 1-2 hours
Remove your mushrooms from the marinade and pop on a serving plate, with space in between each one. Stuff each mushrooms with approx a teaspoon of your chosen stuffing (depending on size)
Keep in the fridge until you’re ready to serve

Top tips for delicious results
Looks stunning with garnish – options include thinly sliced baby tomatoes, sliced olives, parsley, coconut parmesan or even coconut bacon
For a variation to really bring out the flavours – place on dehydrator sheet for 1-2 hours
Include organic where possible. If that’s not possible, use extra soaking time if you can, and rinse well
Seal any leftovers in a BPA-free container in the fridge and finish within 2-3 days
